I worked a trade for an MIM strat body that had been stripped and stained. I plan on doing a nitro finish, then adding a Mighty Mite neck. Right now I'm leaning toward shell pink or shoreline gold, or possibly sonic blue.

It's about a 17-piece body by my estimate Laughing but the grain doesn't look or feel open at all. Do I spray the color, then as many coats of clear as I can get out of a can? Or is the clear even necessary over a color? I know that it will wear faster, but that doesn't necessarily bother me.

Welcome. I would advise a clear coat, as it will give your guitar better depth of color and polishability. On occasion, Fender did not use clear coats on their finishes in the vintage era, but it was the exception, not the rule. Follow the "rule of threes" as outlined in the Reranch 101, and you'll be fine. Three solid coats of clear should be adequate for a nice job.
