I've sold off the 2 "not really orig" p/u's (DiMarzio Super D's) from a 1976 Gibson and got a newer set of Kent Armstrong HRO's. Should I also change out the pots, switch and wiring loom (incl. the jack)????

If there's nothing wrong with the wiring, and if the pots aren't "scratchy", then leave them.
