OK, so I have a guitar w/two GFS Memphis humbuckers, two volumes, a single tone and a three way switch. The 'buckers have 4 leads plus a ground shield. I would like to be able to split each bucker into a single coil using push/pull volume pots.

Is the wiring as easy as taking the red/white ends that are now connected only to each other, and connecting them to ground via the switch?

Yes like this.
Use two push/pull pots if you want to tap them individually.

Everything you need can be found in one of my old threads. I followed the same diagram Structo posted, but used a separate push pull pot for each humbucker. My two volume knobs were the push pull pots. I later had to swap a couple of wires because the two volume knobs interact with each other. In other words, turning the volume down on one turned the master volume down. After switching two wires I had independent volume controls.
